I suspect the impacts on smell/taste from Covid have had far broader impacts than we ever seem to discuss, but aging also affects our preferences.
My relationship to onions, Brussel sprouts, cucumbers, spinach, kale, chard, and many other “bitter” foods has not only been rekindled, but enthusiastically reclaimed in my adulthood. And my life is much richer for it!
